If you are planning a special Valentine’s meal this weekend, take advantage of the Market’s offerings.  What’s more romantic than an easy yet nourishing meal? For starters, serve some of Countryside’s flavorsome carrots with Maiale’s classic hummus.  Then tuck your way into a warm spinach salad with a poached egg from Guinea Hen Garden (see recipe below). Or try braising Maiale’s fish sausage in a Flickerwood red wine and tear into a hearty peasant loaf from Big Sky Bakery. For dessert we recommend Sweet Salvation’s chocolate-covered strawberries. Looks like we’ve got ourselves the most simple, heart thumping, fist pumping, local meal. Bon appetit!

COUNTRYSIDE BAKERY is back this week with their own farm-grown produced and baked goods.

MEADOWSET FARMS brings grass-fed ground lamb and loin chops, plus grass-fed ground beef available. They typically raise only two Jersey steers at a time for beef along with their flock of sheep on the farm.

CROSSAN CONCESSIONS will bring assorted flavors of their fresh-popped Kettle Corn, including traditional, cinnamon, and sweet cheddar (!!).  Look for more flavors to come.

REX FARMS ORCHARDS  recently received a ribbon for their sweet apple cider.  They bring apples, fruit butters and sauces, as well.

SWEET SALVATION TRUFFLES features Valentine chocolates and chocolate-covered strawberries.

TAKE ME BAKE ME PIZZA now sells a 12 inch pizza for the same price as their previous pies.  Look for plain, Margarita, Mediterranean, and veggie pesto.  Pre-orders are preferred – mompops10@gmail.com

WARM SPINACH SALAD with POACHED EGGS

4 Large Eggs
1 lb Baby Spinach
5 Tbs Olive Oil
1/4 Cup Sherry Vinegar
2 Tbs Balsamic Vinegar
2 Large Shallots, thinly sliced
2 tsps coarsely chopped Thyme
                          Freshly ground pepper & salt
  1. In a small saucepan, bring 1 quart of water to a boil. Add 1 teaspoon of salt and the eggs and simmer over moderately high heat for 5 minutes. Using a slotted spoon, transfer the eggs to a bowl of cold water and let stand for 3 to 4 minutes. Keep the pan of hot water on the stove over low heat.
  2. Meanwhile, put the spinach in a large bowl. In a medium skillet, combine the olive oil, sherry and balsamic vinegars, shallots and thyme, and boil for 1 minute.
  3. Crack the eggs all over and gently peel them under warm running water, keeping them whole. Using a slotted spoon, slip the eggs in the hot water for 30 seconds.
  4. Pour the warm dressing over the spinach, season with salt and pepper and toss. Mound the salad on plates, top each with an egg and serve.
