We love Heidi Swanson’s informative recipe blog 101 Cookbooks.  A recent posting featuring strawberries and rhubarb inspired thoughts of an entire meal centered around all the delicious produce that will be available at the very first market of the season.  Our suggestions for an amazing weekend brunch or make ahead dinner is listed below.  We look forward to seeing you at the opening Market!

Spring Season Market Menu

  • Cheese plate featuring the cheeses of the market–we have all three dairy animals represented–cow (god’s country), sheep (highland farm) and goat (amazing acres).
  • Green Salad-lettuce, arugula, baby spinach, radishes–our produce vendors will have all kinds of tender greens available.
  • Savory Asparagus Bread Puddinga great recipe from 101 Cookbooks that includes mushrooms, asparagus and left over sourdough bread.
  • Grilled Meats from Country Meadows Farm–chicken, burger, sausage–what ever your preference–the Lapp brothers have a great selection of pasture raised meats.
  • Strawberry and Rhubarb Crumble–the recipe that inspired the blog posting.  This delicious dessert would pair perfectly with Highland Farm’s maple yogurt–so creamy and delicious this time of year.

The final touch, a beautiful bouquet for the table–what could be better than a farm fresh meal!
