Just a few more days until the opening Market.  To get your taste buds ready for all the delicious greens that will be available at the first Market of the season, here is a great recipe from holistic health coach and guest blogger Ali Brody

You thought potato chips were good? Try this recipe for kale chips, a healthier alternative. They are delicious, trust me.

Kale Chips Recipe:

Prep Time: 10 minutes

Cooking Time: 10 minutes

Yields:  10 servings or more

Ingredients:  1 to 2 bunches kale  and Olive oil   

Directions:  Preheat oven to 425 degrees.Remove kale from stalk, leaving the greens in large pieces.  Place a little olive oil in a bowl, dip your fingers and rub a very light coat of oil over the kale.

Place kale on baking sheet and bake for 5 minutes or until it starts to turn a bit brown. Keep an eye on it as it can burn quickly.  Turn the kale over and bake with the other side up. Remove and serve.  

Notes: Try different kinds of kale or collard greens. For added flavor sprinkle with a little salt or spice, such as curry or cumin afterrubbing on olive oil.
